What is Roasting and Why Does It Matter So Much?
Raw coffee beans are green and odourless. During roasting, the beans undergo chemical transformations at high temperatures. In this process, more than 800 aroma compounds emerge — the deep, rich coffee flavour you drink is born in precisely those moments.
Roasting must be neither too little nor too much. Under-roasted beans taste sour and raw; over-roasted beans turn bitter and complex flavours are lost. Finding the right balance is both science and art.
Our Roasting Philosophy at 1543 Kuru Kahve
We draw inspiration from the tradition of the first coffeehouse established in Turkey in 1543. The master of that era roasted coffee fresh every day — not large warehouse stocks, but small quantities, carefully and attentively.
That is exactly what we do:
- Weekly fresh roasting: We roast our coffee fresh every week in small batches. This way, we deliver the freshest possible beans directly to your cup, without sitting on a shelf.
- Small-batch roasting: Rather than roasting tonnes of beans at once like large industrial roasters, we work with small batches so we can give individual attention to each one.
- Temperature control: Each type of coffee requires its own roasting profile. The medium-dark roast we use for our Turkish coffee brings forward the bean's natural oils and creates that characteristic intense aroma.
After Roasting: The Resting Process
Roasted beans are not immediately ground and brewed. After roasting, the beans rest for 24-48 hours to release the CO₂ trapped inside. This process is critical for the coffee's aroma to fully develop.

The difference between packaged coffee that has sat on supermarket shelves for months and freshly roasted coffee is felt in the very first sip:
